Stir-fried chicken and mushrooms flavoured with balsamic vinegar鶏肉とキノコ炒め・バルサミコ酢風味

I am a mushroom lover! They are so versatile, good for stir-frying, for boiling and for grilling as well. Low-calorie means healthy, of course. They go well with meat too! Even among the dishes with meat in them, this is a very healthy dish I can recommend to you all. This time, we’re using chicken!

➡ Ingredients (for four people)

  • One chicken thigh
  • One packet of Eringi mushrooms (pleurotus eryngii)
  • One packet of Shimeji mushrooms
  • 4 raw shiitake mushrooms
  • 4 tablespoons of balsamic vinegar
  • Some parsley
  • A small amount of salt, pepper and olive oil

➡ Recipe

  1. Cut the chicken into bite-sized pieces and sprinkle lightly with some salt and pepper.
  2. Cut the Eringi and Shiitake mushrooms into bite-sized pieces. Cut the woody stems from the Shimeji mushrooms and separate them.
  3. A bit of olive oil in a frying pan and stir-fry the chicken.
  4. Once the chicken is reasonably cooked, add the mushrooms and stir-fry them together.
  5. Sprinkle some salt and pepper.
  6. Just before turning off the heat, add some balsamic vinegar and mix.
  7. Transfer to a dish and arrange it with some parsley on top. Can’t wait to eat?

💡 Tips

  1. You can use any of your favourite mushrooms!
  2. Once you’ve added the balsamic vinegar, turn the heat off immediately, or the good flavour dies.

  • You can’t fail on this recipe. In whichever way you cook, it’s going to work.
  • Shimeji and eringi mushrooms don’t really have distinctive tastes and most people like them.
  • Some people don’t like shiitake mushrooms, so please check before buying them.


➡  材料 (約4人分)

  • 鶏もも肉  1枚
  • エリンギ  1袋
  • シメジ  1袋
  • 生椎茸  4枚
  • バルサミコ酢  大さじ4
  • パセリ  適量
  • 塩  少々
  • 胡椒  少々
  • オリーブ油  少々

➡ 作り方

  1. 鶏肉は一口大に切り、軽く塩・胡椒を振っておく
  2. エリンギ・椎茸は一口大に切り、シメジはいしづきを切り、適当にほぐす。
  3. フライパンにオリーブ油をひき、鶏肉を炒める。
  4. 鶏肉をある程度炒めたら、キノコを加え更に炒める。
  5. 4)に塩・胡椒で味付けをする。
  6. 火を止める直前にバルサミコ酢をかけ全体を混ぜ合わせる。
  7. お皿に盛りパセリを散らす。

💡 Tips

  1. キノコはお好きなもの何でもOK
  2. バルサミコ酢は香りが大事なので入れてから炒めすぎないように。
