Goboo and Carrot Saladごぼうとにんじんのサラダ

Gobo (burdock roots) are usually used for kinpira gobo (braised burdock root and carrot) or nimono (simmered dishes). I bought gobo salad at a convenience store a long time ago and I liked it so much! Since then, I can’t stop eating it.
These days, you can always find ready-to-eat gobo salad for takeaways at convenience stores or at bento (lunch box) shops, which shows how popular it is! There are appetising-looking salads that have other various veges or seaweed. In this recipe, we’ll stick to the basic combination of gobo and carrot. Did you know gobo has plenty of dietary fibre? It’s definitely good for you!

➡  Ingredients (for four people)

  • 1-2 gobos (depending on the size)
  • One carrot
  • Some sesame oil
  • 3 tablespoons of sake
  • One tablespoon of soy sauce
  • Some mayonnaise and sesame seeds

➡ Recipe

  1. After washing the gobos, cut them into 4 centimetre-long strips.
  2. Cut the carrot in the same way.
  3. Stir-fry the gobo and carrot strips with some sesame oil in the frying pan.
  4. Add sake and soy sauce and stir-fry them further.
  5. Once 4) has cooled down, add some mayonnaise and give it a mix.
  6. Transfer the dish to a plate and sprinkle some sesame seeds on top.

💡 Tips

  1. If you want a less fatty version, skip the process of 3)and 4) and just boil the veges with a little bit of salt in a pot.
  2. You can adjust the stir-frying time according to your preference for texture.

➡  材料 (約4人分)

  • ごぼう・・・1~2本(大きさによる)
  • にんじん・・・1本
  • ごま油・・・適量
  • 酒・・・大さじ3
  • しょうゆ・・・大さじ1
  • マヨネーズ・・・適量
  • ゴマ・・・適量

➡ 作り方

  1. ごぼうは洗って長さ4cmくらいの千切りにする
  2. にんじんも長さ4cmくらいの千切りにする
  3. フライパンにごま油をひき、ごぼうとにんじんを炒める。
  4. 酒としょうゆを加えさらに炒める
  5. 4)が冷めてからマヨネーズを加え混ぜ合わせる
  6. お皿に盛り、ゴマを散らす。

💡 Tips

  1. さっぱり仕上げたい方は、3)と4)の行程をやめて、塩を少し入れたお鍋で茹でて下さい。
  2. 炒める時間は調整して、硬さを調整して下さい。
