Basil flavoured chicken in tomato 鶏のバジル風味トマト煮込み

Perhaps, dishes that require simmering have a negative image especially for a girl like me who can’t be bothered to spend ages in the kitchen. Believe or not, there is a quick recipe that I can positively recommend to busy people. Since I had this incredible dish at my mum’s friend’s house a long time ago, it’s become one of our family’s regular dishes. Great for special occasions as well!

➡  Ingredients (for four people)

  • A half dozen of tebamoto (wing drummettes)
  • One clove of garlic
  • Some ginger
  • A can of tomatoes (in water)
  • 200ml of tomato juice
  • 2 tablespoons of ketchup
  • Some olive oil
  • One teaspoon of dried basil
  • A pinch of salt and pepper
  • One teaspoon of soy sauce

➡ Recipe

  1. A bit of olive oil in a frying pan and stir-fry the finely chopped garlic and ginger.
  2. Once the flavours have come out of the garlic and ginger, stir-fry the wing drummettes on a mid to high heat until they turn golden brown (they don’t have to be cooked through at this stage).
  3. Add lightly hand-squashed tomatoes, tomato juice, ketchup and dried basil and simmer.
  4. Once the soup has thickened, add some salt, pepper and soy sauce to taste.

💡 Tips

  1. You can use chicken thighs and tebasaki (wing mid section with tip) instead.
  2. Some tomato juice can be quite salty. Taste it first.
  3. If the tomato taste is too strong, a little bit of fresh cream will soften the sourness. At the final tasting, try a teaspoon of soy sauce. It will bring a taste of Japan.

  • Of course, you can use pre-made pasta sauce that you buy from the supermarket,
    but I recommend you make the sauce by following this recipe.
  • It tastes nice and natural.
    Fettuccine tastes great with this pasta sauce.

➡  材料 (約4人分)

  • 鶏手羽元  12本
  • ニンニク  1かけ
  • 生姜  適量
  • トマトの水煮缶  1缶
  • トマトジュース  200cc
  • ケチャップ  大さじ2
  • オリーブオイル  適量
  • 乾燥バジル  小さじ1
  • 塩  適量
  • 胡椒  適量
  • 醤油  小さじ1

➡ 作り方

  1. フライパンにオリーブオイルをひき、ニンニク・生姜のみじん切りを炒める。
  2. ニンニク・生姜の香りが出たら、鶏手羽元を並べ中火から強火で、綺麗な焦げ目が付くように焼く。
  3. 手で軽く潰したトマト水煮・トマトジュース・ケチャップ・乾燥バジルを入れ、煮込む。
  4. 煮詰まったら、塩・胡椒・醤油で味を調える。

💡 Tips

  1. 手羽元の代わりに、鶏もも肉や手羽先でもOK
  2. トマトジュースはものによって塩分が違うので、よく味見をしましょう。
  3. トマトの酸味が強ければ、生クリームを少し加えるとまろやかになります。

    • 市販のパスタソースでも代用できますが、このレシピで作ったほうが美味しいです。
    • フェットチーネで作ったら、美味しかったです。
