Smoked salmon and homely potato saladスモークサーモンとジャガイモのゴロゴロサラダ


Believe it or not, this salad has been engineered using leftover food from my fridge. Despite that, it ended up a good and colourful dish and now it’s one of my favourites!
I usually stock smoked salmon and salmon roe in the freezer, divided into small lots. It’s very handy because I don’t have to panic when I have unexpected guests. No more panic attacks!!

➡ Ingredients (for four people)

  • 2-3 potatoes
  • One cucumber
  • 8 slices of smoked salmon
  • Some salted salmon roe
  • 2 tablespoons of whole grain mustard
  • 2 tablespoons of mayonnaise
  • Half a tablespoon of lemon juice
  • 2 tablespoons of virgin olive oil
  • Some salt.

➡ Recipe

  1. Peel the potatoes and boil. Drain them properly and cut them into bite-sized pieces.
  2. Mix whole grain mustard, mayonnaise, olive oil, lemon juice and salt. Add the potatoes and mix again.
  3. Cut the cucumber into bite-sized pieces. Gently rub them with salt.
  4. Transfer the potatoes, cucumber and smoked salmon into a salad bowl. Decorate the dish with salmon roe and enjoy!

💡 Tips

  1. Other veges, such as broccoli, cauliflower and radishes are good for this recipe.
  2. Watch out for the salt contained in smoked salmon and salmon roe. You might have to reduce the salt when adding the potatoes.

  • Whole grain mustard sauce really goes well on salads.
  • As it was before the payday, I didn’t use ikura (salmon roe eggs).

➡  材料 (約4人分)

  • ジャガイモ・・・2~3個
  • きゅうり・・・1本
  • スモークサーモン・・・8枚
  • いくら塩漬け・・・適量
  • 粒マスタード・・・大さじ2
  • マヨネーズ・・・大さじ2
  • レモン汁・・・大さじ1/2
  • バージンオリーブオイル・・・大さじ2
  • 塩・・・少々

➡ 作り方

  1. ジャガイモの皮を剥き茹でで水気をよく切る。
  2. 粒マスタード・マヨネーズ・オリーブオイル・レモン汁・塩を混ぜ、1.を入れて和える。
  3. きゅうりは一口大に切り、軽く塩もみをする。
  4. お皿にジャガイモ、きゅうり、スモークサーモンを並べ、最後にいくらを飾る。

💡 Tips

  1. 野菜はブロッコリー、カリフラワー、ラディッシュなどでも合います。
  2. スモークサーモン、いくらの塩加減を見て、ジャガイモを和える時の塩の量を調整して下さい。
