Cabbage, pork and shimeji mushrooms stir-fried with salted konbu (kelp)キャベツと豚肉としめじの塩昆布炒め

Salted konbu is quite popular in Japan.
It goes really well with fluffy plain rice. You can put it in your favourite ochazuke 1or rice balls.
Well, the great thing about this salted konbu is that you can also use it as a seasoning. The salty konbu taste will add very nice flavours to your dishes.
It’s really worth trying!
This simple speedy dish is perfect for busy people. All you need to do is to stir-fry the ingredients with some salted konbu. Got your apron ready?

➡  Ingredients (for four people)

  • 5-6 cabbage leaves (depending on the size, of-course)
  • One packet of shimeji mushrooms
  • 150 grams of thinly sliced pork belly (butabara)
  • 10 grams of julienned salted konbu
  • Some salt
  • Some pepper
  • Some oil

➡ Recipe

  1. Wash the cabbage and cut off the stalk. Cut it into bite-sized pieces.
  2. Cut the pork belly into bite-sized pieces.
  3. Put some oil in the frying pan and stir-fry the pork.
  4. Add the shimeji mushrooms and the cabbage to the frying pan and sir-fry them. Add the salted konbu, sprinkle some pepper and keep stir-frying.
  5. Adjust the taste by adding more salt.


💡 Tips

  1. If you have a non-stick frying pan, you don’t have to use oil. Pork fat does the same job!
  2. You can use shiitake or eringi mushrooms instead of shimeji mushrooms. Even if you don’t have any mushrooms, no worries!

塩昆布、日本ではポピュラーな食べ物です。炊き立ての白いごはんに乗せて食べたり
お茶漬けにしたり、おにぎりの具にしたり。ごはんとの相性がピッタリです。
でも、ごはんに合わせるだけでなく料理の味付けとしても使えるものなのです。

ダシ+塩味+旨みであっという間に美味しくなります。
今回の炒め物はただ炒めて塩昆布を加えるだけの簡単スピード料理です。

➡  材料 (約4人分)

  • キャベツ:5~6枚(大きさによる)
  • しめじ:1袋
  • 豚バラ肉:150g
  • 細切り塩昆布:10g
  • 塩:少々
  • 胡椒:少々
  • 油:少々

➡ 作り方

  1. キャベツは洗って芯を取り一口大に切る。
  2. 豚バラ肉を一口大に切る。
  3. フライパンに油をひき、豚バラ肉を炒める。
  4. しめじ・キャベツを加えて炒め、塩昆布と胡椒を入れて更に炒める。
  5. 味が薄いようだったら塩で整える。


💡 Tips

  1. テフロン加工のフライパンなら豚バラ肉の油だけで炒められます。
  2. しめじの代わりにしいたけやエリンギでもOK。キノコがなければなくてもOK。
