Spicy konnyaku こんにゃくのピリ辛炒め


Konnyaku is a processed food made from konnyakuimo.
In Japan, people often use it in their nimono or oden 1(well-simmered dishes).
I like the jelly-like texture of konnyaku and it’s one of my favourite ingredients in my nimono2 and oden.
As it’s almost water with very little calories, it perfectly suits people who are on a diet.

Konnyaku hasn’t got many vitamins in it, but it’s full of fibre and calcium.
Good snack when drinking as well!
We’re going to thinly slice the konnyaku in this recipe so that it absorbs all the good flavours quickly. Smart cooking!

➡  Ingredients (for four people)

  • 2 blocks of konnyaku
  • 4 tablespoons of soy sauce
  • One tablespoon of sugar
  • 4 tablespoon of sake
  • Some katsuobushi (shaved dried bonito)
  • Some taka no tsume (red pepper)
  • Some sesame oil

➡ Recipe

  1. Thinly-slice the konnyaku and boil it. Once it’s boiled, put it into a strainer.
  2. Put some sesame oil into the frying pan and stir-fry the konnyaku with taka no tsume.
  3. Add some soy sauce and sugar. Stir-fry them until the excess water is gone.
  4. Once the excess water is gone, sprinkle some katsuobushi and mix.

💡 Tips

  1. You can cut the konnyaku in whatever ways you want. Adding some cuts on the surface of the konnyaku and increasing the surface area help it absorb the flavours well.
  2. You can adjust the amount of taka no tsume and sugar according to your taste. Japanese red peppers are known to be quite hot. Be careful!

➡  材料 (約4人分)

  • こんにゃく(板):2枚
  • 醤油:大さじ4
  • 砂糖:大さじ1
  • 酒:大さじ4
  • かつお節:適量
  • 鷹の爪:適量
  • ごま油:適量

➡ 作り方

  1. こんにゃくを薄く切り、茹でてからざるにあける。
  2. フライパンにごま油をひき、鷹の爪を入れ1.を炒める。
  3. 醤油・砂糖・酒を入れ水分がなくなるまで炒める。
  4. 水分がほとんどなくなったらかつお節を入れ、混ぜ合わせる。

💡 Tips

  1. こんにゃくは好きな切り方でOKです。味が染みこみやすいように切れ目を入れたり
  2. 鷹の爪・砂糖の量はお好みで変えてください。日本のとうがらしは辛いと評判です。

    This looks good! I definitely bought a little too much konnyaku the last time I was at the store (I wonder what it’s shelf life is…) so I’ve been trying to figure out how to use it up, haha.
