Steamed Pork with NEGIPON-Sauce蒸し豚のねぎポンソースかけ


Steaming is a wonderful cooking method for meat and veges because it keeps all the goodness in the ingredients. This clever method will give you beautiful juicy pork belly (butabara). All you have to do is to steam it as a block and cut it later!
Of course, your favourite sauce will enhance the taste as well. As my family likes Chinese dishes, I often make this special sauce using spring onions., which is a bit like a Chinese dressing type sauce. Want to have a go? 

➡  Ingredients (for four people)

  • 400 grams of pork belly (butabara)
  • 2 cucumbers
  • One clove of garlic
  • About 10 grams of ginger
  • One and a half stalks of spring onions

➡ NEGIPON-Saurce

  • A little bit of sesame oil
  • One tablespoon of dou ban jiang
  • One tablespoon of oyster sauce
  • 5 tablespoons of ponzu
  • 5 tablespoons of mirin
  • One tablespoon of sugar
  • Two tablespoons of shaoxing wine

➡ Recipe

  1. With a little bit of sesame oil in the frying pan, stir-fry the garlic, the ginger and the finely chopped spring onions.
  2. Add all the seasonings A to 1) and stir-fry further. Then the NEGIPON-sauce (spring onion sauce) is ready.
  3. Steam the butabara block. Slice it thinly and transfer the slices to a dish.
  4. Thinly slice the cucumbers vertically and put them on top of 1).
  5. Pour the NEGIPON-sauce over and treat yourself!

💡 Tips

  1. If you don’t have a steamer, you can just boil the butabara!
  2. If you don’t have shaoxing wine, you can use ordinary sake. Shaoxing wine gives a better flavour though.
  3. Please adjust the sweetness according to your taste.

➡  材料 (約4人分)

  • 豚バラブロック:400g
  • きゅうり:2本
  • にんにく:1かけ
  • しょうが:1かけ
  • ねぎ:1/2本
  • <中華ソース>

  • ゴマ油:少々
  • 豆板醤:大さじ1
  • オイスターソース:大さじ1
  • ポン酢:大さじ5
  • みりん:大さじ5
  • 砂糖:大さじ1
  • 紹興酒:大さじ2

➡ 作り方

  1. フライパンにごま油をひき、にんにく・しょうが・ねぎのみじん切りを炒める。
  2. 1.に中華ソースの調味料を加えて更に炒める。
  3. 豚バラブロックを蒸し、薄く切って皿に盛る
  4. きゅうりを縦に薄切りにし、3.の上に乗せる
  5. 2.のソースをかける

💡 Tips

  1. 蒸し器がなければ、茹でてもOKです。
  2. 紹興酒がなければ普通のお酒でもOKですが、紹興酒の方が香りがよいです。
  3. 甘みは好みで調節して下さい。
