Avocado, tuna and salmon roe eggs chirashi sushiアボカドとマグロとイクラのちらし寿司 


Chirashi sushi is quite a popular lunch menu for girls at a sushi bar in Japan. It’s sort of like fancy decorated DONBURI1-style sushi.
Note: DONBURI is Japanese-style fast food that has toppings on rice in a bowlOf course, you don’t always have to put it in a bowl. Here is my party chirashi recipe for special occasions. It’s a bit like a giant chirashi cake. You can help yourself!

You wouldn’t ordinarily use avocados for chirashi, but I think it’ll work perfectly. I’m a great fan of avocados and I often use them in my salads. They actually go well with sushi as well. I’m sure they will enhance the gorgeous look of chirashi!

➡  Ingredients (for four people)

  • One avocado
  • One block of tuna (about 200 grams)
  • Some salted salmon roe eggs or marinated salmon roe eggs in soy sauce
  • 4 cups of rice (about 600 grams)
  • 120 grams of sushi vinegar
  • Some soy sauce
  • Some wasabi (Japanese horseradish)
  • Some lemon juice
  • Some salt

➡ Recipe

  1. Cook the rice and mix it with sushi vinegar while the rice is still hot. Once mixed, cool the rice down.
  2. Cut the tuna into 1 centimetre square-shaped pieces and marinade them in soy sauce and wasabi.
  3. Dice the avocado as well. Mix them with a little bit of salt and some lemon juice.
  4. Decorate the vinegared rice with the tuna, the avocado and the salmon roe eggs and enjoy!

💡 Tips

  1. * To know more about sushi vinegar, please refer to the “seasoning” section of “Introduction to Japanese food”.
  2. You can add your favourite fish.
  3. If you like, you can sprinkle some julienned nori (dried seaweed).
  4. When you cook rice for sushi, use Japanese rice and a little bit less water than usual.

  • Once you sprinkle some sushi vinegar onto freshly cooked rice, fold it in and leave it until it cools down.
  • There isn’t really the right amount of sushi vinegar.
  • Some like sweet and sour tastes and some don’t. Please adjust the amount according to your taste.

➡  材料 (約4人分)

  • アボカド:1個
  • マグロ:柵1本
  • イクラ塩漬けまたは醤油漬け:適量
  • 米:4合
  • 寿司酢:120g
  • 醤油:適量
  • わさび:適量
  • レモン汁:適量
  • 塩:適量

➡ 作り方

  1. 米4合を炊き、寿司酢と合わせて、熱を取る。
  2. マグロを1センチぐらいのサイコロ状に切り、わさび醤油に漬けておく。
  3. アボカドをサイコロ状に切り、少量の塩とレモン汁で合わせておく。
  4. 1.の上に2.と3.とイクラを綺麗に散らす。
  5. *寿司酢に関しては、Introduction to Japanese food のSeasoningを参照してください。

💡 Tips

  1. 好きな魚を増やしてもよいです。
  2. お好みで刻み海苔を散らして下さい。
  3. お米は、必ずジャポニカ米で、通常より硬めに炊いて下さい。

  • 酢飯は、と炊いた米に寿司酢を、ざっくりと混ぜて、しばらくそのままにして自然に冷めるまで待ちます。
  • 寿司酢は、家庭によって味付けが違います。お好みで甘くしてみたりと工夫してみてください。
