Chinese Stir-fried Tomato and Eggトマトと卵の中華炒め

Tomatoes are usually eaten raw in salads or cooked to make some sauce, but gentle stir-frying works really well too!
I’ve been a great fan of Chinese stir-fried tomato and egg since I first tried it at a Chinese diner a long time ago and I’ve been cooking it at home ever since. As there is no meat in it, it’s so easy to eat. It’s gentle on your stomach as well. Yummy!

➡  Ingredients (for four people)

  • 4-5 eggs (depending on the size)
  • 3 tomatoes
  • A clove of garlic
  • About 10 grams of ginger
  • Some wakegi green onions
  • One tablespoon of soy sauce
  • One teaspoon of oyster sauce
  • Some salt, pepper and sesame oil

➡ Recipe

  1. With some oil in the frying pan, scramble the eggs lightly and take them out of the frying pan immediately.
  2. With some oil in the frying pan, stir-fry the finely chopped garlic and ginger until the aroma comes up. Add the bite-sized tomatoes and stir-fry them further.
  3. Adjust the taste by adding oyster sauce, soy sauce, salt and pepper.
  4. Finally, add the scrambled eggs and mix the whole thing roughly. Transfer the dish to a plate and sprinkle some wakegi green onions.

💡 Tips

  1. Don’t overcook the eggs at first.
  2. If the tomatoes are too sour, you can add a little bit of sugar.

  • We thought adding some cheese would work perfectly with tomato and egg, but we were too concerned about the total calorie count in the dish. Maybe next time!
  • The combination of Chinese taste and tomato is new and there is plenty of room to advance further.

➡  材料 (4人分)

  • 卵・・・4~5個(大きさによる)
  • トマト・・・3個
  • ニンニク・・・1かけ
  • しょうが・・・1かけ
  • わけぎ・・・適量
  • 醤油・・・大さじ1
  • オイスターソース・・・小さじ1
  • 塩・・・適量
  • 胡椒・・・適量
  • ゴマ油・・・適量

➡ 作り方

  1. フライパンに油をひき、溶いた卵を炒める。ふんわりと軽く混ぜてすぐ取り出しておく。
  2. フライパンに油をひき、にんにく・生姜のみじん切りを炒め香りが出てきたら一口大に切ったトマトを炒める
  3. オイスターソース・醤油・塩・胡椒で味をつける。
  4. 最後に①の卵を加えざっくりと混ぜ、皿に盛ってからわけぎを散らす。

💡 ポイントあれこれ

  1. 最初に卵を炒める時は火を通し過ぎないようにして下さい。
  2. トマトの酸味が強ければ、少量の砂糖を加えて下さい。

  • この組み合わせだと、チーズも足したいが、ちょっとカロリーが多くなるので我慢
  • 中華味とトマトの組み合わせは、新しく開拓すべき未開の地です。
